La localisation de la production formagere: evolutions des approches géographiques

      This article looks at the different approaches adopted by French geographers in relation to the production of cheese from the 1930s until the present-day. From the 1950s to the end of the 1980s geographers were concerned particularly by the economic aspects of production. Initially they studied the role of the urban area in the choice of agricultural production, the forms of industrialization of production and the qualitative requirements of consumers (with the change from regional patterns of consumption to the need to produce a standardized cheese for sale throughout France and abroad). From the period 1960-70, the analysis of firm takes on greater importance and it is especially from this angle, rather than that of the development of cattle rearing, that the location of cheese production is considered. Finally, since the end of the 1980s and illustrative of the debate over the quality of food products and the links with the place of production, cheese production has become a model to analyze the spatial anchoring of food manufacture.

      Cet article étudie les différentes approches que les géographes français ont eu de la production fromagère de la fin des années 1930 à nos jours. Des années 1950 à la fin des années 1980, les géographes ont été surtout sensibles aux aspects économiques de la production. Dans un premier temps, les géographes envisagent le rôle d'animateur de la ville dans le choix des productions agricoles, s'intéressent aux formes d'industrialisation de la production et parallèlement s'interrogent sur les besoins qualitatifs des consommateurs (passage des habitudes régionales de consommation à la nécessité de la production d'un fromage standardisé qui se vend partout en France et s'exporte). A partir des années 1960-1970, l'analyse des entreprises est de plus en plus prégnante et c'est surtout par ce biais, plutôt que par celui de l'évolution de l'élevage bovin, que la localisation de la production fromagère est envisagée. Enfin, depuis la fin des années 1980, illustrant le débat sur la qualité des produits agroalimentaires et ses liens aux lieux, le fromage est devenu un modèle d'étude pour analyser l'ancrage territorial de productions agro-alimentaires.
