En un momento de grave crisis global y en el que el número de personas hambrientas ha alcanzado la cifra de los 1.000 millones, es necesario insistir en que la alimentación no es solamente una necesidad básica del ser humano, sino un derecho humano fundamental consagrado en los principales documentos sobre derechos humanos.
El presente artículo sintetiza el proceso de construcción del derecho a la alimentación como derecho humano desde su inclusión en la Declaración Universal de los Derechos Humanos en 1948 hasta las directrices voluntarias para la realización progresiva del derecho a una alimentación adecuada en un contexto de seguridad alimentaria nacional aprobadas por el Consejo de la FAO en 2004.

Now that the severe global crisis is on and that over 1 billion people are suffering from hunger, it is more necessary than ever to underline that food not only is a basic human need, but also a fundamental human right, explicitly recognized in the main Declarations of Human Rights.
This paper traces the process leading from the recognition of the right to food as a human right, as it was included in the Universal Human Rights Declaration in 1948, to further developments of the content of such right on to the Voluntary Guidelines to support the progressive realization of the right to adequate food in the context of national food security, adopted by the 127th Session of the FAO Council, November 2004
