La estructura actual de la producción de frijol (Phaseolus vulgaris L.) por variedad no corresponde a los gustos y preferencias del consumidor. La falta de sincronización en la producción y consumo de frijoles negros, pintos y claros origina déficit en algunas variedades y excedentes en otras. Con la finalidad de determinar una estructura productiva regional por variedades que considere las preferencias del consumidor y la logística en el abasto y distribución del consumo y producción, se usó un modelo espacial multiproducto. Los resultados indican que, en el año 2006, se presentó un déficit de variedades negras y pintas, por 129.8 y 88.3 mil toneladas, y un excedente de claras, por 100.9 mil. La especialización de la producción, en función de las preferencias del consumidor y del nivel de importaciones observados en 2006, deberá considerar el aumento de la oferta de frijoles negros y pintos por 52.8 y 72.1 mil toneladas, respectivamente, así como la contracción de la producción de variedades claras en 124.9 mil.
The current structure of bean production (Phaseolus vulgaris L.) by variety does not correspond to the tastes and preferences of consumers. The lack of synchronization between production and consumption of black, pinto and clear beans, originates deficit in some varieties and surplus in others. We used a multi-spatial model in order to determine a regional production structure by variety that takes into consideration the consumer preferences and the logistics in the supply and distribution of consumption and production. The results indicate that in 2006, there was a deficit of 129,88 and 88,3 thousand tons of black and pinto varieties, as well as a surplus of 100,9 thousand of clear variety. The specialization of the production, determined by the consumer preferences and the figures of imports observed in 2006, should regard the increase of 52,8 and 72,1 thousand tons on the supply of black and pintos beans, respectively; and the decrease in the production of clear varieties by 124,9 thousand tons.
