    • This article examines efforts to double and triple fortify salt to prevent diseases. Ionized salt protects against thyroid disease and learning disabilities. Scientists in Canada have been working on ways to add vitamin A and iron to salt to protect children in poor countries from blindness. The scientists had to find a way to bind incompatible chemicals together which they did through encapsulation. Then they had to make it look like salt so people would use it.
