  • The article discusses the role of sugars in bone strength. Research published in the October 16, 2007 issue of the "Chemistry of Materials" journal indicates that sugary compounds are responsible for the structure of bone. Based on nuclear magnetic resonance imaging of horse bones, researchers concluded that polysaccharides known as glycosaminoglycans and proteoglycans help to guide the proper crystallization of bone minerals.
