We introduce an artificial vision application that obtains bubble velocity and foam thickness evolution in sparkling wines, from a digital video sequence. The extraction of bubble velocity is carried out by an innovative procedure that combines a non-linear image processing technique (Mathematical Morphology) with a motion estimation method (Block Matching). The results allows us to work with adaptive blocks. They make it possible to improve the motion estimation and speed up the computations. The evolution of foam thickness is measured using linear filters
