  The new denatured animals. -- There are not distinct, domestic and wild, animal species. But there are animals on which mankind can act in one way or another. Two opposite categories of animals are now in favor among Western peoples: pets and so-called wild animals. For people fond of pets, only anthropomorphized animals are good: a kind of substitute for children or teddy bears. People who like wild animals think that the only true animals are those living in nature where they are separated from (and protected by) mankind. But animals of both sorts have been "denatured": such categories come out of a social reworking of the boundary with the animal kingdom. In some cases, this boundary has been abolished; in others, it has been restored or more clearly marked. But the issue remains the same: establish a new "social contract" with certain (wild, pet) animals in order to redeem the misdeeds we guiltily commit against other animals as we eat (game, fowl and livestock).

  Il n'y a pas des espèces animales domestiques et sauvages distinctes, mais des animaux sur lesquels l'homme peut agir dans un sens ou dans l'autre. Aujourd'hui, deux catégories opposées d'animaux se partagent les faveurs des Occidentaux : les animaux familiers et les animaux dits sauvages. Pour les amateurs des premiers, il n'y a de bons que les animaux andiropomorphisés, substituts d'enfants ou de peluches. À l'inverse, les partisans des seconds considèrent que seules valent les bêtes vivant à l'état de nature, séparées -- protégées -- de l'homme. En réalité, il s'agit dans un cas comme dans l'autre d'animaux dénaturés qui procèdent d'un travail social sur la frontière avec l'animalité, destiné tantôt à abolir celle-ci, tantôt à la renforcer ou à la restaurer, et dont l'enjeu est chaque fois le même : instaurer un nouveau « contrat social » avec certains animaux (familiers, sauvages) afin de racheter les méfaits dont nous nous rendons coupables envers les autres en les mangeant (gibier, volaille, bétail).
