    • Emulsions are unstable biphasic systems formed by two immiscible liquids with droplets sizes covering a range that varies from nanometres to micrometres, depending on the type. Their origin can be either spontaneous or artificial by the action of emulsifiers. Among the diverse types, nanoemulsions are the most remarkable ones due to their wide range of applications and furthermore their thermodynamic stability, being relevant in vaccines and others drug delivery systems. Moreover, nanoemulsions present the ability to release their content in a process called destabilization.
