    • After a brief reminder on the main stages of muscular differentiation, the papar gives a short account of sorne of the studies on the biology of muscles we have carried out on the rabbit and comments them in the light of results published in the world literatura. Although subtile biological criteria are used, the aims of these works are highly practical. The objective is to better understand what determines variations in meat quality in the rabbit. lt is now an evidence that the criteria which account for post mortem evolution of muscle into meat vary widely between muscles. The lasting character of metabolic differentiation explains the sensitivity of muscular traits and relatad technoloQical criteria of meat to biological (somatotropin) or zootechnical (dietary nutrient balance, slaughter age) factors. The between and within bread variability of rate or/and amplitude of muscle differentiation has probably to be taken in account in programmes of genetic improvement of growth, in order to preserve meat quality.
