  • A humorous article is presented which discusses research on the formation and development of eyes, or holes, in Emmental cheese, also known as Swiss cheese. It references a study published in the "International Dairy Journal" entitled "Mechanism and Control of the Eye Formation in Cheese". It is suggested that eyes are formed by airborne hay particles, while carbon dioxide gas causes their expansion.
