The article explores decreased food and water intake in the U.S. and how it relates to failing sanitation systems. Particular focus is given to instances in the rural South. Additional topics discussed include how this relates to the history of racial segregation in the U.S., environmental infrastructure and poverty, and high rates of diabetes and obesity in the southeastern U.S.
