The article discusses research on nutrition and disease and growing evidence that processed carbohydrates may be more to blame than saturated fat for increasing the risks of obesity, diabetes and heart disease. A meta-analysis of studies and up to 23 years of data reported on in the March 2010 issue of the "American Journal of Clinical Nutrition" is said to show no association between saturated fat consumption and heart disease. Study director and atherosclerosis researcher Ronald M. Krauss is cited regarding the study.
