Topics include how attempts to protect tomatoes from getting damaged on their way to supermarkets has led to the development of tomato varieties lacking in taste, the effect of refrigeration used in shipping on taste, and efforts by horticulturists Harry J. Klee and Linda M. Bartoshuk at the University of Florida to reverse engineer the tomato.
