  • Schiffman interviews Eben Bayer, co-founder of Ecovative, regarding mushrooms as the new styrofoam. Among other things, Bayer tells that in general they are cost competitive with synthetic packaging materials such as expanded polystyrene and polyethylene. Plastics start with expensive, finite feedstocks derived from oil or natural gas. They're starting with waste from farms.
