Resumen de El mundo del azúcar en la documentación inquisitorial canaria entre 1505 y 1526

El objetivo principal de esta investigación es el de mostrar la utilización de las fuentes inquisitoriales para el estudio de la historia del azúcar en Canarias entre 1488 y 1526. Junto con la aparición sistemática de términos como «azúcar» o «ingenios», encontramos un buen número de o*cios relacionados con la plantación y la cura de la planta, y otros que intervienen en los ingenios, que no habían sido con*rmados por otras vías. Son importantes asimismo para revelar la situación geográ*ca de varios ingenios desconocidos hasta ahora. Además, sirven para conocer la religiosidad de propietarios y trabajadores y cómo actuó la Inquisición sobre ellos.

The main objective of this research is to demonstrate the use of inquisitorial sources for the study of the history of sugar in the Canary Islands between 1488 and 1526. Together with the systematic appearance of terms like «sugar» or «sugar mills», we *nd a good number of trades related to planting and care of the plant, and others involved in the sugar mills, which had not been con*rmed by other means. +ey are likewise signi*cant to reveal the location of several millheretofore unknown. +ey also serve to determine the religiosity of owners and workers and how the Inquisition acting on them.
