The free and bound volatile secondary metabolites of Vitis vinifera grape cv. Semillon

    • The volatile secondary metabolites, as well as those released by acid‐ or glycosidase enzyme hydrolysis of C18 reversed phase isolates of Semillon juices from two successive vintages, have been analysed. The categories of constituents (i.e. norisoprenoids, benzenoid compounds, monoterpenes, aliphatic and miscellaneous compounds) and the components observed within these categories were essentially the same as those previously reported for the varieties Chardonnay and Sauvignon Blanc. (3S*,5R*,6S*,9ζ)‐Megastigm‐7‐ene‐3,6,9‐triol has been identified as a hydrolysis product of grape‐derived C18 reversedphase isolates for the first time.
