This paper recounts the heritage of culinary education, its historical foundations, and the individuals who provided early leadership in the culinary arts education movement. Also discussed are three key issues surrounding the creation of a successful system of culinary arts education in America: 1) school-industry partnership; 2) changing public perceptions towards the profession of chef and 3) the development of a systematic approach to culinary arts education.
