    This paper tries to ilustrate some of the questions that arise in the evolution of the historical construction of anorexia nervosa as an illness. In general, the following points will be dealt with analytically: the appearance of cases of food reduction between the XVII and XIX centuries; the birth and development of anorexia nervosa as a distinct clinical entity in the second half of the XIX century; and a discussion about the historical centraly of the criterion «fear of becoming fat». In a final stage, and according to the previous lines of debate, the nature of the social-scientific construction of anorexia nervosa will briefly be considered.

    Cet article essaie d'illustrer quelques questions que traversent l'évolution de la construction historique de I' anorexie nerveuse comme une maladie. D'une façon générale, on s' occupe analitiquement des points suivants: l'apparition des cas de réduction alimentaire entre le XVII et le XIX siêcles: la naissance et développment de I' anorexie comme une entité clinique particuliêre dans la seconde moitié de la XIX siêcle et une discussion sur la centralité historique du critérium «la peur d' engraisser». Finalement, et suivant les lignes de débat antérieurs, on va considerer en bref la nature de la construction sociale et scientifique de l'anorexie nerveuse.
