La aloja enfriada en nieve era una bebida popular desde el siglo XVII en la capital del virreinato del Perú y sus ingresos estuvieron ligados alternativamente al cabildo para el mantenimiento de la Alameda, un sitio de esparcimiento limeño, y después a la Hacienda Real. Los establecimientos que las vendían eran conocidos como alojerías donde la aloja podía venderse con o sin hielo. Si se vendía con hielo, no debía ser derretido en la bebida porque se consideraba perjudicial para la salud. Este producto tuvo alta demanda, sobre todo, en los meses de verano y era ofrecido a las autoridades durante las festividades y recibimiento de personalidades.
The “aloja” chilled in snow was a popular drink since the seventeenth century in the capital of the viceroyalty of Peru and its income was linked alternately to the council for the maintenance of the Alameda, a Lima recreation site, and also to the Royal Treasury. The establishments that sold them were known as “alojerias” and could be sold with or without ice that served to cool the drink, but the ice should not be melted into the drink because it was considered unhealthy to do so. This product was in high demand especially in the summer months and was offered to the high authorities during festivities and reception of personalities.
