Migración cubana: ¿Influencia en la oferta de establecimientos de alimentos y bebidas en Quito?

    La migración, fenómeno que en los últimos años no ha estado ausente en el Ecuador, el país es un territorio que recibe migrantes de diversas nacionalidades, entre ellas cubanos, esto debido a que a partir del 2008, se promovió en la Constitución Política del Estado una política migratoria inclusiva, amplia y de respeto a los derechos humanos, en la cual los ciu- dadanos extranjeros mayoritariamente no requieren visa para ingresar al Ecuador. El objetivo principal de esta investigación es determinar como la migración cubana incide en la implemen- tación de establecimientos de alimentos y bebidas en la ciudad de Quito. Para el cumplimiento del objetivo se aplicó un enfoque cualitativo, el método descriptivo- exploratorio con el que se definió el fenómeno de la migración y a la vez se estudió la creación de establecimientos de cocina cubana en la ciudad, adicionalmente se abordó el patrimonio turístico desde la óptica gastronómica. Por otro lado se utilizó Sistema de Información Geográfica (SIG o GIS) para determinar la ubicación de los establecimientos existentes en la ciudad. Como resultado de la investigación se ha podido determinar el efecto de la migración en la oferta de establecimientos de comida cubana en la ciudad de Quito. Los cuales están en el Centro Norte de Quito.

    Migration, a phenomenon that in recent years has not been absent in Ecuador, the country is a territory that receives migrants of various nationalities, including Cubans, this because since 2008, it was promoted in the Political Constitution of State an inclusive, compre- hensive and respectful human rights migration policy, in which foreign citizens do not require a visa to enter Ecuador. The objective of this research is to determine how Cuban migration affects the implementation of food and beverage establishments in the city of Quito. In order to achieve the objective, a qualitative approach was applied, the descriptive-exploratory me- thod with which the phenomenon of migration was defined and at the same time the creation of Cuban cuisine establishments in the city was studied, additionally the tourist heritage was approached from the gastronomic optics On the other hand, Geographic Information System (GIS or GIS) was used to determine the location of existing establishments in the city. As a result of the investigation, it has been possible to determine the effect of migration on the offer of Cuban food establishments in the city of Quito. Which are in the North Center of Quito.
