    la gastronomía portuguesa de los siglos XV y XVII brinda aportes para la profundización de la sensibilidad del tema, los gustos y significados culturales. Se examina la fruta a través de dos obras: por un lado el Libro de cocina de la Infanta D. Maria de Portugal, monumento de especializacion de la fruta en la historia de la cocina portuguesa; por otro, Arte de Cocina, de Domingos Rodrigues. El Libro de Cocina de la Infanta D. Maria, a pesar de haber sido escrito entre los siglos XIV y XV, recién se publicó en el siglo XX, en Coimbra por orden de la Universidad.

    El segundo libro fue publicado por primera vez en el período de 1600, en Lisboa. Sobre la base de estos dos libros, este artículo ofrece un aporte al conocimiento de la historia de la valoración de la fruta en Portugal.

    Portuguese gastronomy in the fields of history and memory between the 15th and the 17th century provides us with literary, discursive and cultural investments of two essential works for the in-depth study of the topic, sensibilities, tastes and cultural meanings. Given the specific economy of this chapter, we weren�t able to dissect the precise authorial frame of mind and cultural affiliations which organized the environments that generated the work, the Livro de Cozinha da Infanta D.

    Maria. The memorial specialization of fruit in the history of Portuguese gastronomy throughout this work, and Arte de Cozinha, by Domingos Rodrigues, is also a reconstruction of the past. A summary of the biographical information concerning authorship is presented, along with indicators which clarify this 17th century work. The chronological limit was literally set in 1700, and therefore these two works were included.

    One was handwritten � the Livro de Cozinha da Infanta D. Maria de Portugal �, and even though it was written within the time period of the 15th/16th century, it was only published in the 20th century (more specifically in 1967) in Coimbra, by order of the University and under the supervision of Professor Giacinto Manuppella and Professor Salvador Dias Arnaut, and the other one � �Arte de Cozinha� � was printed and edited for the first time in 1683, in Lisbon, more specifically in the �Officina de Joaõ Galraõ�, and dedicated to the Count of Vimioso.

    a gastronomia portuguesa nos domínios da história e da memória entre os séculos XV e XVII dá-nos investimentos literários, discursivos, culturais de duas obras fulcrais para o aprofundamento do tema, sensibilidades, gostos, e sentidos culturais. Na economia particular deste capítulo não foi possível invadir o pensamento autoral, as filiações culturais, precisos que organizaram os ambientes que geraram a obra, o Livro de Cozinha da Infanta D. Maria. A especialização memorial da fruta na história da gastronomia portuguesa através desta obra, e da Arte de Cozinha, de Domingos Rodrigues é também uma reconstrução do passado.

    Sumariam-se dados biográficos sobre a autoria e perseguiram-se indicadores que esclarecem esta obra Seiscentista. O limite cronológico fixou-se literalmente em 1700, pelo que englobamos estas duas obras, uma manuscrita, Livro de Cozinha da Infanta D. Maria de Portugal, que mesmo tendo sido escrita no interior da periodização de Quatrocentos/ Quinhentos, só foi publicada no século XX, em Coimbra, por ordem da Universidade, em 1967, sob a responsabilidade dos Professores Giacinto Manuppella e Salvador Dias Arnaut, e a outra na categoria de impressa e editada a primeira vez, no período de Seiscentos, em Lisboa, na officina de Joaõ Galraõ: 1683, e dedicada ao Senhor Conde de Vimioso.
