En aquests primers anys del segle XXI, han aparegut a Espanya diversos estudis centrats en la immigració i la seva alimentació. Les raons que els han motivat tenen a veure, sobretot, amb els àmbits de l'economia (els immigrants s'han convertit en un segment de consumidors «interessant»), de la «gastronomia ètnica» o de l'«exotisme alimentari», i de la salut (els immigrants poden presentar riscos nutricionals més o menys específics els quals seria convenient identificar i atendre).

In these recent years of XXI century, several surveys focused on immigration and food trends have appeared. The aim of those studies is related in particular to the fields of economy (immigrants turned to be an «interesting» target of consumers), ethnic gastronomy or exotic food, and health (immigrants may show potentially specific nutritional risks that should be identified and attended).
