Se han valorado seis caracteres organolépticos en dieciséis muestras de Bonito del Norte (Thunnus alalunga) según el método de la CEE, comparándolo con su valor pH. Por los resultados obtenidos se observa una buena correlación entre el grado de frescura y su valor pH (r = -0,61).
También se estudia la evolución que experimenta el pH en tres lotes de bonito decapitado-eviscerado y en cinco de entero, a temperatura de refrigeración. En el eviscerado el cambio de pH no es significativo en las primeras 48 horas, cuando se mantiene la cadena del frío. En el entero, visto a los 6,7 y 8 días, el incremento es significativo (alfa mayor o igual que 1 x 10 elevado a menos 3).
Six organoleptic characters on sixteen different samples of Thunnus alalunga have been valued according to the EEC Method, compairing it with its pH. Following the results, we can see a good relationship between the freshness and its pH (= -0,61).
We have also been studying the evolution of pH on three different lots of beheaded and eviscerated thunnus and on five others of entire thunnus, at a refrigeration temperature. The pH change is not significative on the eviscerated one in the first 48 hours, when the coldness sequence is kept. On the entire one, after 6,7 and 8 days the increase is significative (alpha equal or major that 1 x 10 elevated to - 3).
