En la elaboración de la mayoría de las cervezas artesanales de hoy en día se añade una cantidad considerable de lúpulo. Las variedades de lúpulo empleadas aportan distintos aromas a la cerveza. Este artículo describe las últimas investigaciones de la interacción del lúpulo y la levadura y su influencia en el aroma final de la cerveza. Este trabajo muestra cómo la presencia de la levadura y distintos lúpulos influyen sobre la composición de compuestos aromáticos y de esta manera sobre el perfil sensorial de la cerveza. Los resultados demuestran una similitud entre las cervezas elaboradas con el mismo lúpulo pero aun así cada cerveza tiene compuestos característicos únicos.
Most of today’s successful craft beers are made with considerable amounts of hops added. Depending on the hop varieties used the spectrum of resulting flavours changes. This paper describes the latest investigation about the interaction between hops and yeast and their influence on the final aroma of the beer. This work shows how the presence of yeast and the different hops used influences the composition of the aromatic compounds and therefore the sensory profile of the beer. The results depict a similarity between the beers produced with the same hop. However each beer has characteristic arom compounds.
