This paper reports on the historical development of viticulture and oenology in the Ukraine, with particular emphasis on their evolution in the southern regions, including the Crimea, Odessa and Kherson areas. Grape and wine production are surveyed and the uses made of grapes in different viticultural regions of the Ukraine are noted. There is a short account of the situation in the country following the political turmoil of the late 1980s.
