Background and Aim This study describes the development and testing of a sensor based on screen‐printed electrodes immobilised with deferoxamine (DFO) for the determination of iron ions in wine. The necessity of developing a sensor for the quantification of the iron concentration in wine is justified by the deterioration of the product's composition because of wine casse, which occurs in the presence of oxygen at a concentration of iron above 10 mg/L.
Methods and Results The sensor is used together with a potentiostat which displays the response in the form of a cyclic voltammogram. The performance of the developed potentiometric sensor was validated by good sensitivity (2.93E‐05), low limit of detection (0.87 mg/L), high reproducibility and good stability.
Conclusion A good correlation (P ˂ 0.01) was obtained between the measurement of iron concentration in wine samples by the reference method, atomic absorption spectroscopy and the DFO sensor.
Significance of the Study The DFO sensor offers major advantages, such as a rapid analysis of iron ions, portability, low limit of detection and low cost of analysis.
