Resumen de Estudio comparativo de la producción y la composición de la leche ordeñada en la oveja Guirra y Manchega

  En este trabajo se compara la producción, la composición de la leche y el estado sanitario de la ubre durante 120 días de ordeño, en 30 ovejas de raza Guirra y 20 de raza Manchega. El objetivo es comprobar los elevados contenidos de proteína de la leche en ovejas Guirras cuando su alimentación y manejo son idénticos al de otras razas. Las ovejas Guirras tuvieron una producción inferior a las Manchegas (860 ± 22 vs. 1.098 ± 30 ml/día; P < 0,001), pero su leche presentó valores más altos de proteína bruta (6,39 ± 0,05% vs. 6,18 ± 0,06%; P < 0,001), caseína (4,96 ± 0,04% vs. 4,83 ± 0,05%; P < 0,05), proteína del suero (1,44 ± 0,02% vs. 1,34 ± 0,02%; P < 0,001) y lactosa (4,79 ± 0,02% vs. 4,63 ± 0,02%; P < 0,001). También fue superior en las ovejas Guirras el log(RCS) (5,29 ± 0,02 vs. 4,87 ± 0,03; P < 0,001). Sin embargo, el contenido en grasa (8,027 ± 0,09% vs. 8,12 ± 0,11%), extracto seco útil (14,42 ± 0,12% vs. 14,31 ± 0,15%) y materia seca (20,08 ± 0,12 vs. 19,81 ± 0,15%) fueron similares en ambas razas.

  In this work, a comparison of the milk yield, composition and of the sanitary condition of the udder during 120 days of milking, using 30 ewes of the Guirra breed and 20 of the Manchega breed was carried out.. The objective of this study was to check high values of protein in Guirra milk when feeding and management are the same to other breeds. The milk production from the ewes of the Guirra breed was lower than the milk production of the ewes of the Manchega breed (860 ± 22 vs 1.098 ± 30 ml/day; P < 0,001), although this milk presented higher values in terms of gross protein (6,39 ± 0,05% vs 6,18 ± 0,06%; P < 0,001), caseine (4,96 ± 0,04% vs 4,83 ± 0,05%; P < 0,05), serum protein (1,44 ± 0,02% vs 1,34 ± 0,02%; P < 0,001), and lactose (4,79 ± 0,02% vs 4,63 ± 0,02%; P < 0,001). The log (SCC) was also higher in the Guirra breed in comparison with the Manchega breed (5,29 ± 0,02 vs 4,87 ± 0,03; P < 0,001). On the other hand, fat content (8,027 ± 0,09% vs 8,12 ± 0,11%), useful dry extract (14,42 ± 0,12% vs 14,31 ± 0,15%) and dry matter (20,08 ± 0,12% vs 19,81 ± 0,15%) were similar in both breeds.
