El texto describe y analiza los contextos rituales totonacos donde las aves de corral entran en juego. Se muestra la importancia de su ciclo de vida y los distintos usos culinarios según sus estadios de desarrollo, es decir, del huevo a la gallina o gallo. El análisis se sustenta sobre un principio de organización que resulta fundamental para la vida religiosa de este grupo : la tensión entre la fracción y completitud.
The text describes and analyzes the Totonac people’s rituals where fowl come into play. It is shown the importance of their life cycle for the different culinary uses according to their stages of development, in other words, from the egg to the chicken or rooster. This analysis is based on an organizing principle which is fundamental to the religious life of this group: the tension between fraction and wholeness.
