The desorption isotherms of cajui (Anacardium spruceanum) peduncle pulp in nature was determined experimentally at 60 0C. Anderson, GAB, Langmuir, Oswin and Smith models were tested to fit experimental data. The GAB and Anderson models are suitable for representing the relationship between water activity and equilibrium moisture content of cajui in the range of water activity 0.05-0.96. The mono-layer moisture content obtained from the GAB equation was 0.255 kg H20/kg dry material.
