This work presents a quantitative study of the dietary fibre provided by the so called high fibre rate food. Within such group of dietetic products it has been made a difference between brans and wholemeals.
Detergent methods were used, but due to the high content of starch, these methods were combined with an enzymatic treatment of which two different possibilities were assayed.
