Se evaluó el efecto de la adición de diferentes conservadores sobre la vida útil de tortillas de maíz preparadas con masa fresca extrudida. Se probaron los siguientes conservadores: propionatoNa; sorbato-K; hidróxido-Ca; y propil-parabeno. También se evaluaron distintas mezclas de éstos en las que se utilizaron diferentes niveles de concentración. Las tortillas tratadas con conservadores fueron almacenadas a temperatura ambiente (22±1 o C) y de refrigeración (4 o C). Se registró el conteo de bacterias mesofílicas aerobias (BMA), así como el de mohos y levaduras (ML). Las tortillas tratadas con hidróxido-Ca y sorbato-K tuvieron una vida de anaquel de 3 d cuando se almacenaron a 22 o C, y de ocho d a 4 o C. El menor crecimiento de BMA y de ML ocurrió en las tortillas que contenían una mezcla de conservadores. Las tratadas con 0.30% de propionato-Na, 0.125% de sorbato-K y 0.1% de propil-parabeno, así como aquellas con 0.30% de propionato-Na, 0.125 de sorbato-K y 0.1% de ácido fumárico, tuvieron una vida útil de 6 d cuando se almacenaron a 22 o C, y de hasta 16 d a 4 o C. La combinación de dos o más conservadores con refrigeración (4 o C) prolongó la vida útil de las tortillas.
The effect of adding different preservatives on the shelf life of corn tortillas prepared from extruded masa was evaluated. The following preservatives were evaluated: Na-propionate; K-sorbate; Cahydroxide; and propyl-paraben. Blends of these preservatives in different concentrations were also evalauted. The tortillas treated with preservatives were studied at room temperature (22±1 o C) and under refrigeration (4 o C). The mesophylic bacterial count (MBC), and mold and yeast counts (MYC) were taken. The tortillas treated with Ca-hydroxide and K-sorbate had a shelf life of 3 d when stored at 22 o C and eight d when stored at 4 o C. The minimum growth of MBC and MYC ocurred in tortillas containing a blend of preservatives. Tortillas treated with 0.30% Na-propionate, 0.125% K-sorbate and 0.1% propyl-paraben, and those containing 0.30% Na-propionate, 0.125% K-sorbate and 0.1% fumaric acid, had a shelf life of 6 d when stored at 22 o C and up to 16 d when stored at 4 o C. The combination of two or more preservatives with refrigeration (4 o C) extended tortilla shelf life.
