Optimización del proceso de extracción de pectina de lima persa (citrus latifolia tanaka) de la zona de Cuitláhuac, Veracruz

    • This study presents the process optimization of pectin extraction by acid hidrolysis from lemon (Citrus Latifolia Tanaka). Raw material was donated by an orchard owner from the city of Cuitláhuac, Veracruz. The methodology followed was: raw material selection, washing, weighting, enzymatic inactivation, acid hydrolysis (T= 80 y 90°C/60 min.) and (pH = 1.5 y 2), filtration, precipitation, drying, grinding and packaging. Additionally, the quality of the obtained pectin was determined by the equivalent weight, content of anhidrourionic acid (AGA) and metoxil. The extraction yield was 7.25% on a dry basis, and the product presented a white appearance. The pectin obtained, according to the AGA and metoxil content, fell into a high metoxil classification, therefore a rapid gelification is expected. It is possible to conclude that the extraction of pectin from lemon is a viable option for the further exploitation of this fruit. Moreover, the process conditions that maximize the recovery yield are 80°C and an acid hydrolysis with a pH adjusted at 2, reaching the optimization objective of the present study.
